Assuming you already know how to peel the edges after the egg sets, and you have your folding technique down, the real key to a great Sunday mid-morning omelette is simple: saute the veggies before you put them in the omelette. I'm still getting my timing down, but this morning I had crisp hot bell pepper and onion ready to go right on top of the mozzarella in my Sunday omelette. I think what makes it so much better, besides the nice flavor, is that it doesn't suddenly lower the heat of the partially cooked egg, so you end up with a fluffier omelette.
